Description
Crispy air fried falafel made with chickpeas, pumpkin, herbs, and spices. A healthy and flavorful twist on a Middle Eastern classic.
Ingredients
1 ½ cups cooked chickpeas
1 cup pumpkin puree
½ small onion, chopped
3 garlic cloves
½ cup fresh parsley leaves
½ cup breadcrumbs or chickpea flour
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon coriander
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon baking powder
Instructions
1. In a food processor, combine chickpeas, pumpkin, onion, garlic, parsley, cumin, coriander, paprika, salt, pepper, and baking powder. Pulse until blended but not smooth.
2. Stir in breadcrumbs or flour until mixture holds together.
3. Shape into balls or patties.
4. Preheat air fryer to 375°F (190°C). Lightly brush falafel with oil.
5. Place falafel in basket and cook 10 to 12 minutes, flipping halfway, until golden.
6. Serve warm with lemon wedges and dipping sauce.
Notes
Chill the mixture before shaping if it feels too soft.
Add more flour if too wet. For extra crispiness, brush falafel with olive oil before air frying.
