Description
Tender acorn squash rings roasted in the air fryer and filled with a flavorful mix of quinoa, cranberries, pecans, and herbs. A wholesome, elegant seasonal dish.
Ingredients
2 acorn squashes
2 tablespoons olive oil
Salt and black pepper
1 cup cooked quinoa
½ cup dried cranberries
½ cup chopped pecans
2 tablespoons fresh parsley
1 tablespoon balsamic glaze or lemon juice
Instructions
1. Cut acorn squash into 1 ½-inch rings and remove seeds.
2. Brush with oil, season, and air fry at 375°F for 15–20 minutes.
3. Mix quinoa, cranberries, pecans, parsley, and balsamic glaze.
4. Spoon filling into cooked squash rings.
5. Garnish with herbs and serve warm.
Notes
Slice rings evenly for best results.
Don’t overcrowd air fryer basket.
Try swapping quinoa with rice or adding goat cheese for variation.
