Description

These chewy Apple Tahini Date Bars are naturally sweetened, packed with oats, apples, and sticky dates, then topped with nutty tahini. A nourishing, fall-inspired treat perfect for breakfast, snacks, or dessert.


Ingredients

1 1/2 cups rolled oats

1/2 cup almond flour

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cardamom

1/4 teaspoon salt

1 cup Medjool dates, pitted

1/2 cup unsweetened applesauce

1/2 cup tahini, plus more for drizzling

2 tablespoons maple syrup

1 apple, finely diced

1 teaspoon vanilla extract

Optional: sesame seeds for topping


Instructions

Preheat oven to 350°F and line an 8×8 inch baking pan with parchment paper.

In a food processor, pulse the oats, almond flour, cinnamon, cardamom, and salt until just combined.

Add the dates, applesauce, tahini, maple syrup, and vanilla extract. Blend until a thick, sticky dough forms.

Fold in the finely diced apple using a spatula until evenly distributed.

Press the mixture firmly and evenly into the prepared pan.

Drizzle additional tahini over the top and sprinkle with sesame seeds, if using.

Bake for 25 to 28 minutes or until edges are golden and center is firm.

Remove from oven and cool completely in the pan.

For clean slices, chill in the fridge for 20 minutes before cutting into bars.

Store in the fridge or freeze for later.

Notes

Soak dates in warm water for 10 minutes if they are not soft.

Chop the apple into very small pieces to ensure even distribution and soft texture.

Use certified gluten-free oats if needed.

Sunflower seed butter can be substituted for a nut-free version.

Bars can be frozen individually and stored for up to 3 months.
