Description
A cozy one-pan Autumn Harvest Chicken Skillet with crispy chicken thighs, caramelized onions, tender apples, and fresh herbs simmered in a savory-sweet sauce.
Ingredients
4–6 bone-in, skin-on chicken thighs
2 tbsp olive oil or butter
2 apples, thinly sliced
2 medium red onions, sliced into wedges
3 cloves garlic, minced
1/2 cup chicken broth or apple cider
1 tbsp Dijon mustard (optional)
1 tsp fresh thyme leaves (plus sprigs for garnish)
1 tsp fresh rosemary, chopped
Salt and black pepper, to taste
Instructions
1. Pat chicken thighs dry and season with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken skin-side down until golden and crispy, about 6–7 minutes. Flip and cook another 5 minutes. Remove and set aside.
3. Add onions to the skillet and cook until softened, about 5 minutes. Stir in garlic and apples, cooking 2 more minutes.
4. Deglaze with chicken broth or cider, scraping browned bits. Stir in thyme, rosemary, and Dijon if using.
5. Return chicken to skillet, nestling among apples and onions. Cover and simmer 20 minutes, until chicken reaches 165°F internally.
6. Garnish with fresh thyme and serve warm.
Notes
Use Honeycrisp, Gala, or Fuji apples for sweetness, or Granny Smith for tartness.
Add a splash of white wine for extra flavor.
For a richer sauce, stir in cream before serving.
