A cozy fall twist on Alfredo pasta, this Autumn Harvest Creamy Pumpkin Alfredo features velvety pumpkin purée, garlic, Parmesan, and cream for a rich and seasonal comfort dish.
Ingredients
12 oz fettuccine or spaghetti
2 tbsp unsalted butter
3 garlic cloves, minced
1 cup pumpkin purée
1 cup heavy cream
½ cup grated Parmesan cheese
¼ tsp nutmeg
Salt and pepper to taste
2 tbsp fresh parsley, chopped
2 tbsp roasted pumpkin seeds
Instructions
1. Cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water and drain.
2. Melt butter in skillet, sauté garlic for 1 minute.
3. Stir in pumpkin purée and cook 2 minutes.
4. Add heavy cream, simmer gently.
5. Stir in Parmesan, nutmeg, salt, and pepper until smooth.
6. Toss with pasta, adding pasta water as needed.
7. Garnish with parsley, pumpkin seeds, and Parmesan.
8. Serve warm.
Notes
Use pure pumpkin purée, not pumpkin pie filling.
Freshly grated Parmesan gives the best results.
Add spinach, chicken, or shrimp for extra flavor.
