Ingredients
6 slices bacon, chopped
1 tablespoon butter
1 small onion, diced
3 cloves garlic, minced
2 tablespoons all-purpose flour
4 cups chicken broth
1 cup heavy cream
1 pound potato gnocchi
2 cups shredded sharp cheddar cheese
Salt and black pepper to taste
2 green onions, sliced for garnish
Instructions
1. In a large pot, cook bacon until crispy. Remove and set aside.
2. Add butter to the same pot and sauté onion until softened. Stir in garlic and cook 1 minute.
3. Sprinkle flour over and whisk to make a roux.
4. Gradually pour in chicken broth, whisking constantly until smooth.
5. Stir in heavy cream and bring to a gentle simmer.
6. Add gnocchi and cook until tender, about 3-4 minutes.
7. Stir in shredded cheddar cheese until melted and creamy.
8. Return bacon to the pot, reserving some for topping.
9. Season with salt and pepper.
10. Serve hot with green onions and extra cheese on top.
Notes
For a lighter version, substitute half-and-half for heavy cream. Add spinach or kale for extra greens. Shred cheese fresh for best melting results.
