Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup unsalted butter, cold and cubed
- 1 cup shredded cheddar cheese
- 3/4 cup buttermilk
- 1 pound thinly sliced roast beef
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Whisk until well mixed.
- Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
- Stir in the shredded cheddar cheese until evenly distributed.
- Gradually pour in the buttermilk, stirring gently with a fork until the dough just comes together. Avoid overmixing.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it forms a cohesive ball.
- Roll the dough out to about 1-inch thickness.
- Cut out biscuits using a biscuit cutter or a glass and place them on a parchment-lined baking sheet.
- Gather scraps, knead gently, and roll out again to cut more biscuits.
- Bake in the preheated oven for 12-15 minutes, or until golden brown.
- In a medium saucepan, combine the beef broth, Worcestershire sauce, garlic powder, onion powder, dried thyme, and cayenne pepper (if using).
- Bring to a simmer over medium heat. Add the thinly sliced roast beef and stir to coat. Simmer for 5-7 minutes.
- Remove the biscuits from the oven and let them cool for a few minutes.
- Slice each biscuit in half horizontally.
- Spoon a generous amount of the beef filling onto the bottom half of each biscuit, including some broth.
- Top with the other half of the biscuit. Optionally, sprinkle extra cheese on top before serving.
Notes
- For a spicier kick, include the cayenne pepper in the beef filling.
- These biscuits are best served warm and can be garnished with fresh parsley for added flavor and presentation.
