- 2 ripe bananas, mashed
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup brown sugar, packed (for filling)
- 1 tablespoon ground cinnamon
- 1/4 cup unsalted butter, softened (for filling)
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened (for glaze)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract (for glaze)
- 2–3 tablespoons milk (as needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the mashed bananas, granulated sugar, and brown sugar. Mix until well combined.
- Add the melted butter to the banana mixture and stir until fully incorporated.
- Crack in the egg and pour in the vanilla extract. Mix until fully blended.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- In a small bowl, combine the brown sugar and ground cinnamon.
- Spread the softened butter evenly over the surface of the dough.
- Sprinkle the cinnamon-sugar mixture evenly over the buttered dough and press gently.
- Roll the dough into a tight log from one end.
- Cut the log into 1-inch thick slices using a sharp knife or dental floss.
- Place the rolls in a greased 9×13 inch baking dish, leaving space between each roll.
- Cover the baking dish with a clean kitchen towel and let the rolls rise in a warm place for 30-45 minutes.
- While the rolls are rising, prepare the cream cheese glaze by beating together the softened cream cheese and butter until smooth.
- Add the powdered sugar and vanilla extract, mixing until well combined. Adjust consistency with milk as needed.
- Once the rolls have risen, bake in the preheated oven for 25-30 minutes, or until golden brown.
- Check for doneness with a toothpick; it should come out clean.
- Let the rolls cool in the pan for about 10 minutes.
- Drizzle the cream cheese glaze over the warm rolls.
- Allow the glaze to set for a few minutes before serving.
- Enjoy warm or store in an airtight container for up to 3 days.
