Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar, packed (for filling)
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, softened (for filling)
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened (for glaze)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for glaze)
  • 23 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed bananas, granulated sugar, and brown sugar. Mix until well combined.
  3. Add the melted butter to the banana mixture and stir until fully incorporated.
  4. Crack in the egg and pour in the vanilla extract. Mix until fully blended.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  7. In a small bowl, combine the brown sugar and ground cinnamon.
  8. Spread the softened butter evenly over the surface of the dough.
  9. Sprinkle the cinnamon-sugar mixture evenly over the buttered dough and press gently.
  10. Roll the dough into a tight log from one end.
  11. Cut the log into 1-inch thick slices using a sharp knife or dental floss.
  12. Place the rolls in a greased 9×13 inch baking dish, leaving space between each roll.
  13. Cover the baking dish with a clean kitchen towel and let the rolls rise in a warm place for 30-45 minutes.
  14. While the rolls are rising, prepare the cream cheese glaze by beating together the softened cream cheese and butter until smooth.
  15. Add the powdered sugar and vanilla extract, mixing until well combined. Adjust consistency with milk as needed.
  16. Once the rolls have risen, bake in the preheated oven for 25-30 minutes, or until golden brown.
  17. Check for doneness with a toothpick; it should come out clean.
  18. Let the rolls cool in the pan for about 10 minutes.
  19. Drizzle the cream cheese glaze over the warm rolls.
  20. Allow the glaze to set for a few minutes before serving.
  21. Enjoy warm or store in an airtight container for up to 3 days.
