Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or non-stick spray, and optionally line the bottom with parchment paper.
  3. In a medium bowl, mash the ripe bananas with a fork until smooth, leaving a few small lumps for texture. Set aside.
  4. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
  5. Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract until combined.
  6. Gently fold the mashed bananas into the wet mixture using a spatula.
  7. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  8. Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Start with a third of the flour mixture, mix until just combined, then add half of the sour cream. Repeat until all ingredients are incorporated, being careful not to overmix.
  9. Fold in walnuts or chocolate chips if using.
  10. Pour the batter into the prepared cake pan and spread it evenly with a spatula.
  11. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
