BBQ Pulled Pork Zucchini Boats are a low-carb, cheesy BBQ meal made by stuffing fresh zucchini halves with pulled pork, BBQ sauce, and melty cheese. Perfect for a healthy, flavorful dinner or meal prep.
Ingredients
– 4 medium zucchinis, halved lengthwise
– 2 cups pulled pork, cooked and shredded
– 3/4 cup BBQ sauce
– 1 cup shredded cheddar cheese
– 1 tbsp olive oil
– Salt and black pepper, to taste
– Fresh parsley or green onions, chopped (for garnish)
Instructions
1. Preheat oven to 375°F (190°C).
2. Slice zucchinis lengthwise and scoop out centers to create boats.
3. Brush zucchini with olive oil and season with salt and pepper.
4. Mix pulled pork with BBQ sauce and spoon into zucchini boats.
5. Top with shredded cheese.
6. Bake for 20–25 minutes, until cheese is melted and zucchini is tender.
7. Garnish with parsley or green onions and serve hot.
Notes
– Use pulled chicken or brisket if desired.
– Add jalapeños for extra heat.
– For vegetarian, use BBQ jackfruit.
– Don’t overbake to keep zucchini firm.
