Ingredients
For the Salsa:
– 2 cups fresh pineapple, diced
– 1 cup fresh blueberries
– ¼ cup red onion, finely chopped
– ¼ cup fresh cilantro, chopped
– 1 small jalapeño, seeded and finely diced
– Juice of 1 lime
– ½ tsp salt
– ¼ tsp black pepper
For Serving:
– Tortilla chips
– Grilled chicken, fish, or tacos (optional)
Instructions
1. Dice the pineapple into small cubes. Finely chop the red onion, jalapeño, and cilantro.
2. In a large mixing bowl, combine the pineapple, blueberries, red onion, jalapeño, and cilantro.
3. Squeeze in the lime juice and sprinkle with salt and pepper.
4. Gently stir to combine, being careful not to mash the blueberries.
5. Taste and adjust seasoning if needed. Add more lime juice for tanginess or jalapeño for extra heat.
6. Let the salsa sit for 10–15 minutes before serving to allow the flavors to blend.
7. Serve chilled with tortilla chips, grilled meats, or tacos.
