Description

Blueberry Summer Salsa is a fresh, no-cook recipe that combines sweet blueberries with ripe tomatoes, red onion, cilantro, and lime juice. It’s the perfect balance of sweet, savory, and tangy—ideal for chips, tacos, or grilled meats.

Ingredients

– 1 cup fresh blueberries

– 2 large Roma tomatoes, diced

– 1/4 cup red onion, finely chopped

– 1/4 cup fresh cilantro, chopped

– 1 small jalapeño, seeded and minced (optional)

– Juice of 1 lime

– 1/2 tsp salt, or to taste

– 1/4 tsp black pepper, or to taste

Instructions

1. In a medium bowl, combine blueberries, diced tomatoes, red onion, cilantro, and jalapeño (if using).

2. Squeeze in the lime juice and season with salt and black pepper.

3. Gently stir until combined, being careful not to mash the blueberries.

4. Chill in the fridge for 10 minutes before serving.

5. Serve with chips, grilled chicken, fish tacos, or as a side salad topping.

Notes

– Use fresh, firm blueberries for best texture.

– Add diced mango or pineapple for a tropical variation.

– Swap cilantro for parsley or basil if preferred.

– Leftovers keep in the fridge for up to 3 days.
