Ingredients

  • 8 ounces of pasta (penne or rotini)
  • 2 cups of fresh broccoli florets
  • 1 tablespoon of olive oil
  • 3 cloves of garlic, minced
  • 1 cup of heavy cream
  • 1 cup of shredded sharp cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 teaspoon of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the pasta to the boiling water and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
  3. About 3 minutes before the pasta is done, add the broccoli florets to the pot to blanch them.
  4. Drain the pasta and broccoli in a colander, reserving about 1/2 cup of the pasta water.
  5. In the same pot, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  6. Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
  7. Gradually add shredded cheddar and grated Parmesan cheese, stirring until melted and smooth (3-5 minutes).
  8. Season with salt, pepper, and red pepper flakes (if using). Adjust seasoning to taste.
  9. Add the drained pasta and broccoli back into the pot with the cheese sauce. Toss gently to coat.
  10. If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached.
  11. Taste and adjust seasoning if necessary.
  12. Serve in bowls or on plates, ensuring even distribution of pasta and broccoli.
  13. Sprinkle with freshly chopped parsley for color and freshness.
