This creamy Broccoli Cheese Pasta features tender pasta and vibrant broccoli enveloped in a rich cheese sauce, making it a comforting and delicious way to sneak in some veggies for a cozy dinner.

- 8 ounces of pasta (penne or rotini)
- 2 cups of fresh broccoli florets
- 1 tablespoon of olive oil
- 3 cloves of garlic, minced
- 1 cup of heavy cream
- 1 cup of shredded sharp cheddar cheese
- 1/2 cup of grated Parmesan cheese
- Salt and pepper to taste
- 1/4 teaspoon of red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the pasta to the boiling water and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
- About 3 minutes before the pasta is done, add the broccoli florets to the pot to blanch them.
- Drain the pasta and broccoli in a colander, reserving about 1/2 cup of the pasta water.
- In the same pot, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
- Gradually add shredded cheddar and grated Parmesan cheese, stirring until melted and smooth (3-5 minutes).
- Season with salt, pepper, and red pepper flakes (if using). Adjust seasoning to taste.
- Add the drained pasta and broccoli back into the pot with the cheese sauce. Toss gently to coat.
- If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached.
- Taste and adjust seasoning if necessary.
- Serve in bowls or on plates, ensuring even distribution of pasta and broccoli.
- Sprinkle with freshly chopped parsley for color and freshness.
