Crispy, cheesy, and full of flavor, these Broccoli Feta Fritters are a quick and healthy vegetarian dish. Perfect as a side, snack, or meal prep option — golden on the outside and tender inside.
Ingredients
2 cups broccoli florets, chopped and steamed
½ cup crumbled feta cheese
2 large eggs
½ cup flour or breadcrumbs
2 tbsp chopped parsley
1 clove garlic, minced
¼ tsp salt
¼ tsp black pepper
Olive oil for frying
Instructions
1. Steam broccoli until tender, then chop finely.
2. Mix broccoli, feta, eggs, flour, parsley, garlic, salt, and pepper in a bowl.
3. Heat olive oil in a skillet over medium heat.
4. Form mixture into small patties and cook 2–3 minutes per side until golden brown.
5. Drain on paper towels and serve warm with yogurt or dipping sauce.
Notes
Drain broccoli well to prevent sogginess.
For baking, cook at 400°F (200°C) for 20–25 minutes.
Add lemon zest or chili flakes for extra flavor.
