Description

Rich, creamy, and loaded with cinnamon-spiced apples and gooey caramel, these Caramel Apple Cheesecake Bars are the ultimate fall dessert bars.

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

2 tablespoons brown sugar

3 (8 oz) packages cream cheese, softened

3/4 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

3 cups Granny Smith or Honeycrisp apples, peeled and chopped

2 tablespoons unsalted butter

1/4 cup brown sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon all-purpose flour

1/2 cup caramel sauce

1/3 cup chopped pecans or walnuts (optional)


Instructions

Preheat oven to 325°F and line a 9×13-inch pan with parchment paper.

Mix graham cracker crumbs, melted butter, and brown sugar in a bowl. Press evenly into the prepared pan and bake for 8-10 minutes. Let cool slightly.

In a large bowl, beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

Pour cheesecake mixture over the cooled crust and spread evenly.

In a saucepan, melt butter over medium heat. Add chopped apples, brown sugar, cinnamon, and nutmeg. Cook for 5-7 minutes until apples begin to soften. Stir in flour and cook another minute until thickened.

Spoon the apple mixture evenly over the cheesecake layer.

Bake for 35-40 minutes, or until the center is just set.

Let the bars cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

Before serving, drizzle with caramel sauce and sprinkle with chopped nuts if desired. Cut into bars and serve.

Notes

Use parchment paper for easy removal and cleaner slicing.

Make sure cream cheese is at room temperature to avoid lumps.

Bars can be frozen individually and thawed overnight in the fridge.

For extra flavor, use gingersnap crumbs instead of graham crackers.
