These Cheesy Beef Chimichangas are loaded with taco-seasoned ground beef, gooey cheddar cheese, and diced green peppers—then pan-fried or baked until golden and crispy. They’re the perfect crunchy, cheesy, savory meal for busy weeknights or casual dinners!
Ingredients
– 1 lb ground beef
– 1 packet taco seasoning (or 2 tbsp homemade seasoning)
– ½ cup water
– 1 green bell pepper, diced
– 1 ½ cups shredded cheddar cheese (or Mexican blend)
– 4 large flour tortillas (burrito size)
– 2 tbsp vegetable oil (for frying)
Optional Toppings:
– Chopped cilantro
– Pico de gallo
– Salsa
– Sour cream
– Guacamole
Instructions
1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
2. Stir in taco seasoning, water, and diced green pepper. Simmer for 2–3 minutes until thickened.
3. Lay out a tortilla and add beef mixture to the center. Sprinkle generously with shredded cheese.
4. Fold in the sides of the tortilla, then roll tightly to form a burrito.
5. Heat oil in a skillet over medium heat. Place chimichangas seam-side down and cook 2–3 minutes per side until golden brown.
6. Serve topped with cilantro, pico de gallo, sour cream, or your favorite toppings.
