Chicken Sausage with Zucchini, Roasted Tomatoes & Farfalle Pasta is a quick, healthy pasta dish featuring browned chicken sausage, sautéed zucchini, sweet roasted tomatoes, and bow-tie pasta, tossed with fresh herbs and Parmesan for an easy, flavorful meal.
Ingredients
12 ounces farfalle (bow-tie) pasta
2–3 pre-cooked chicken sausages, sliced
2 medium zucchini, sliced into half-moons
1 pint cherry tomatoes
3 tablespoons olive oil, divided
3 cloves garlic, minced
½ teaspoon Italian seasoning
¼ teaspoon red pepper flakes (optional)
Kosher salt and black pepper, to taste
¼ cup grated Parmesan cheese (plus more for serving)
2–3 tablespoons fresh parsley, chopped
Zest of 1 lemon (optional)
Instructions
Preheat oven to 425°F (220°C). Place cherry tomatoes on a lined baking sheet. Drizzle with 1 tablespoon olive oil, season with salt, pepper, and Italian seasoning. Roast for 15–18 minutes, until soft and caramelized.
Meanwhile, cook farfalle pasta in salted water until al dente. Reserve ½ cup pasta water, then drain.
While pasta cooks, heat 2 tablespoons olive oil in a large skillet over medium-high. Add sliced sausage; brown 3–4 minutes. Add zucchini; sauté 4–5 minutes until golden and tender. Stir in garlic; cook 1 minute.
Add roasted tomatoes and drained pasta to the skillet. Toss well, adding pasta water as needed.
Stir in Parmesan, lemon zest, and parsley. Season with salt, pepper, and red pepper flakes.
Serve hot, garnished with extra Parmesan and parsley.
Notes
Use any cooked sausage you like. Add extra veggies or swap pasta shapes as desired. For extra flavor, finish with a squeeze of lemon juice before serving.
