- 2 cups cooked chicken, shredded or diced
- 1 cup Greek yogurt
- 1 medium cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cup feta cheese, crumbled
- 1 cup cooked quinoa or rice (optional)
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- Fresh parsley, for garnish (optional)
Instructions
- In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and black pepper. Mix well until all the ingredients are fully incorporated.
- Taste the tzatziki sauce and adjust the seasoning if necessary. Add more lemon juice for tanginess if desired.
- Cover the bowl with plastic wrap and refrigerate the tzatziki sauce for at least 30 minutes.
- In a large mixing bowl, add the cooked chicken. If you haven’t cooked the chicken yet, poach, grill, or bake it until fully cooked, then shred or dice it.
- Add the halved cherry tomatoes and crumbled feta cheese to the bowl with the chicken.
- If using quinoa or rice, stir that in as well.
- Fold the tzatziki sauce gently into the chicken mixture until everything is well coated.
- Preheat your oven to 375°F (190°C).
- Grease a 9×13 inch baking dish with olive oil.
- Pour the chicken and tzatziki mixture into the prepared baking dish, spreading it out evenly.
- Sprinkle the shredded mozzarella cheese evenly over the top.
- Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the edges are slightly golden.
- To check if it’s heated through, insert a knife or toothpick into the center; if it comes out hot, it’s ready.
- Remove the casserole from the oven and let it sit for about 5-10 minutes before serving.
- Cut the casserole into squares and serve on plates.
- Garnish with fresh parsley if desired.
- This casserole pairs well with a simple side salad or warm pita bread.
