Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup Greek yogurt
  • 1 medium cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1 cup cooked quinoa or rice (optional)
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and black pepper. Mix well until all the ingredients are fully incorporated.
  2. Taste the tzatziki sauce and adjust the seasoning if necessary. Add more lemon juice for tanginess if desired.
  3. Cover the bowl with plastic wrap and refrigerate the tzatziki sauce for at least 30 minutes.
  4. In a large mixing bowl, add the cooked chicken. If you haven’t cooked the chicken yet, poach, grill, or bake it until fully cooked, then shred or dice it.
  5. Add the halved cherry tomatoes and crumbled feta cheese to the bowl with the chicken.
  6. If using quinoa or rice, stir that in as well.
  7. Fold the tzatziki sauce gently into the chicken mixture until everything is well coated.
  8. Preheat your oven to 375°F (190°C).
  9. Grease a 9×13 inch baking dish with olive oil.
  10. Pour the chicken and tzatziki mixture into the prepared baking dish, spreading it out evenly.
  11. Sprinkle the shredded mozzarella cheese evenly over the top.
  12. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the edges are slightly golden.
  13. To check if it’s heated through, insert a knife or toothpick into the center; if it comes out hot, it’s ready.
  14. Remove the casserole from the oven and let it sit for about 5-10 minutes before serving.
  15. Cut the casserole into squares and serve on plates.
  16. Garnish with fresh parsley if desired.
  17. This casserole pairs well with a simple side salad or warm pita bread.
