Description

Chilled Cucumber Couscous Salad is a refreshing Mediterranean-inspired dish with pearl couscous, crisp cucumber, creamy feta, fresh herbs, and a bright lemon dressing. Perfect for summer picnics, meal prep, or a light lunch!


Ingredients

1 cup pearl (Israeli) couscous

1 ½ cups water or vegetable broth

1 large English cucumber, diced

½ cup crumbled feta cheese

¼ cup chopped fresh parsley

2 tablespoons chopped fresh dill or mint (optional)

2 green onions, sliced

Zest and juice of 1 large lemon

2 tablespoons extra virgin olive oil

½ teaspoon sea salt, plus more to taste

¼ teaspoon black pepper


Instructions

Bring water or broth to a boil in a saucepan. Add couscous and a pinch of salt. Cover and simmer 8–10 minutes, until tender. Fluff and cool to room temperature.

In a large bowl, whisk together lemon juice, zest, olive oil, salt, and pepper.

Add cooled couscous, cucumber, feta, parsley, dill or mint, and green onions. Toss gently to combine.

Chill in the refrigerator for at least 30 minutes before serving.

Garnish with extra herbs and lemon slices. Serve cold or at room temperature.

Notes

Use seedless cucumber for less water. Add tomatoes, chickpeas, or avocado for variety. Keeps well for 3–4 days in the fridge. Swap feta for goat cheese or omit for dairy-free.
