Buttery brioche buns filled with creamy vanilla custard and topped with melty chocolate chips. A bakery-style treat that’s perfect for breakfast, brunch, or dessert!
Ingredients
For the Brioche Dough:
– 1 package store-bought brioche dough (or puff pastry)
For the Vanilla Custard Filling:
– 1 cup whole milk
– 3 egg yolks
– ¼ cup granulated sugar
– 2 tablespoons cornstarch
– 1 teaspoon vanilla extract
For the Topping:
– ½ cup chocolate chips (semisweet or dark)
– 1 egg (for egg wash)
– 1 tablespoon milk (for egg wash)
Instructions
1. In a saucepan, whisk together egg yolks, sugar, and cornstarch. Slowly add milk, whisking constantly.
2. Cook over medium heat, stirring until thickened (about 5 minutes). Remove from heat and stir in vanilla. Cool completely.
3. Roll out brioche dough into a rectangle on a floured surface.
4. Spread cooled custard over the dough. Roll up lengthwise and slice into 1 to 1.5-inch thick rounds.
5. Place rounds on a parchment-lined baking sheet. Sprinkle chocolate chips on top, pressing gently into the custard.
6. Whisk egg and milk together. Brush the dough edges with egg wash.
7. Bake at 350°F (175°C) for 18-22 minutes, until golden brown.
8. Let cool slightly and serve warm.
Notes
– Use white chocolate chips for a variation.
– Add orange zest to the custard for extra flavor.
– Assemble the night before and bake fresh in the morning.
– Freeze leftovers and reheat at 325°F for 8-10 minutes.
