Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (3-5 minutes).
- Mix in the eggs and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, cream of tartar, salt, and cocoa powder.
- Gradually add the dry mixture to the wet mixture in three parts, mixing on low speed until just combined.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- In a small bowl, mix together the 1/4 cup of granulated sugar and 2 teaspoons of ground cinnamon.
- After chilling, scoop out portions of dough and roll them into balls (about 1.5 inches in diameter).
- Roll each dough ball in the cinnamon sugar mixture until fully coated.
- Line a baking sheet with parchment paper or a silicone mat.
- Arrange the rolled dough balls on the baking sheet, leaving about 2 inches of space between each.
- Bake for 10-12 minutes until set around the edges but still soft in the center.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
