  • 1 tablespoon honey or maple syrup (optional, for sweetness)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Carefully separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in a separate bowl.
  3. Add cottage cheese, almond flour, baking powder, salt, and vanilla extract to the egg yolks. If desired, add honey or maple syrup. Mix until smooth.
  4. Beat the egg whites on medium-high speed until stiff peaks form, about 3-5 minutes.
  5. Gently fold the whipped egg whites into the cottage cheese mixture, being careful not to deflate the egg whites.
  6. Fold in the blueberries gently.
  7. Line a baking sheet with parchment paper or grease it with cooking spray.
  8. Drop dollops of the batter onto the prepared baking sheet, leaving space between each.
  9. Bake for 25-30 minutes, or until golden brown and firm to the touch.
