Creamy, protein-packed cottage cheese egg bites baked to fluffy perfection. A healthy, filling breakfast that’s low-carb, gluten-free, and perfect for meal prep.
Ingredients
6 large eggs
1 cup cottage cheese
½ cup shredded cheddar or mozzarella (optional)
1 cup chopped veggies (spinach, bell pepper, onion, or broccoli)
½ tsp garlic powder
½ tsp onion powder
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat oven to 350°F (175°C). Grease or line muffin tin.
2. Blend eggs and cottage cheese until smooth.
3. Stir in shredded cheese, veggies, garlic powder, onion powder, salt, and pepper.
4. Pour into muffin cups, filling ¾ full.
5. Bake 20–25 minutes until golden and set.
6. Cool before removing and garnish with parsley.
Notes
Use silicone muffin liners to prevent sticking.
Blend cottage cheese for the smoothest texture.
Sauté watery veggies like spinach or mushrooms before adding.
