Description
Soft, fluffy rolls made with cottage cheese for added protein and herbs for flavor. Perfect plain or stuffed, these Cottage Cheese Herb Protein Rolls are wholesome, satisfying, and ideal for any meal.
Ingredients
For the Dough:
2 ½ cups all-purpose flour
1 cup cottage cheese
2 ¼ teaspoons instant yeast
½ cup warm milk
2 tablespoons olive oil or melted butter
1 tablespoon sugar
1 teaspoon salt
2 tablespoons fresh parsley or chives, chopped
For the Filling (optional):
1 cup cottage cheese
2 tablespoons fresh chives, finely chopped
¼ teaspoon garlic powder
Pinch of salt and pepper
For the Topping:
2 tablespoons melted butter
1 garlic clove, minced
1 tablespoon fresh parsley, chopped
Instructions
1. Mix warm milk, sugar, and yeast. Let sit until foamy, about 5 minutes.
2. In a bowl, combine flour, salt, cottage cheese, olive oil, herbs, and yeast mixture. Knead until smooth, 6–8 minutes.
3. Cover and let rise for 1 hour, or until doubled.
4. Punch down dough. Divide into equal pieces. If filling, flatten, add filling, and seal tightly.
5. Place on a parchment-lined baking sheet. Cover and rise 30 minutes.
6. Preheat oven to 375°F (190°C). Brush with garlic butter topping.
7. Bake 18–22 minutes, until golden. Brush again with butter after baking.
Notes
Keep dough slightly sticky for fluffy rolls.
Seal filled rolls well to avoid leaks.
Use whole wheat flour for added fiber.
