- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup cold unsalted butter, cubed
- 1 cup shredded sharp cheddar cheese
- 3/4 cup buttermilk
- 1 cup lump crab meat, picked over for shells
- 1/4 cup cream cheese, softened
- 1 tablespoon Worcestershire sauce
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh parsley, chopped (plus more for garnish)
- 1/4 cup melted butter (for brushing)
- 1/2 teaspoon Old Bay seasoning (for topping)
Instructions
- In a large mixing bowl, combine the flour, baking powder, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Whisk until well mixed.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs with small pea-sized pieces of butter.
- Stir in the shredded cheddar cheese until evenly distributed.
- Pour in the buttermilk and gently mix with a spatula until just combined. The dough should be slightly sticky with a few lumps.
- In a separate bowl, combine the lump crab meat, softened cream cheese, Worcestershire sauce, lemon juice, and chopped parsley. Gently fold together, being careful not to break up the crab meat too much.
- Season the crab mixture with a pinch of salt and pepper to taste. Add hot sauce or Old Bay seasoning if desired.
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Drop about 1/4 cup of the biscuit dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Create a small well in the center of each biscuit dough mound for the crab filling.
- Spoon about 1 tablespoon of the crab mixture into each well, encasing it with biscuit dough.
- Use remaining biscuit dough to cover any exposed crab filling.
- Brush the tops of the biscuits with melted butter.
- Sprinkle Old Bay seasoning over each biscuit.
- Bake for 15-20 minutes, or until golden brown and cooked through. Check for doneness with a toothpick.
- Let the biscuits cool on the baking sheet for about 5 minutes before transferring to a wire rack.
- Mix remaining melted butter with a pinch of garlic powder and chopped parsley.
- Brush the garlic butter mixture over the tops of each biscuit.
- Garnish with additional parsley and serve warm.
Notes
- These biscuits are best enjoyed fresh out of the oven but can be stored in an airtight container for a couple of days.
- Serve with spicy remoulade or cocktail sauce for dipping.
