Description

A moist and tangy quick bread made with cottage cheese for added protein and cranberries for a burst of tart flavor. Perfect for breakfast, snacks, or holiday baking.


Ingredients

1 ½ cups all-purpose flour

1 cup cottage cheese

½ cup sugar

2 large eggs

¼ cup olive oil or melted butter

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon vanilla extract

½ teaspoon almond extract (optional)

1 cup cranberries (fresh or frozen, or ¾ cup dried, soaked)

¼ cup chopped nuts (optional, for topping)


Instructions

1. Preheat oven to 350°F (175°C). Line or grease a 9×5-inch loaf pan.

2. In a bowl, whisk flour, baking powder, baking soda, and salt.

3. In another bowl, blend cottage cheese (optional) and mix with eggs, sugar, oil, vanilla, and almond extract.

4. Combine wet and dry ingredients until just mixed. Fold in cranberries.

5. Pour into loaf pan and top with nuts if desired.

6. Bake 45–55 minutes, until a toothpick comes out clean.

7. Cool before slicing and serving.

Notes

Blend cottage cheese for smoother bread texture.

Coat cranberries in flour to prevent sinking.

Substitute sugar with honey or maple syrup if preferred.
