Rich and comforting creamy Cajun chicken soup made with shredded chicken, peppers, onions, garlic, Cajun spices, and cream. A bold and hearty one-pot meal perfect for cozy nights and Louisiana-inspired dinners.
Ingredients
2 tablespoons olive oil
1 small onion diced
1 red bell pepper sliced
1 green bell pepper sliced
3 cloves garlic minced
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper optional
4 cups chicken broth
2 cups cooked shredded chicken
1 cup heavy cream or half and half
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a large soup pot over medium heat. Add onion and sliced peppers and cook until softened about 5 minutes.
Stir in garlic and cook for 1 minute until fragrant.
Add Cajun seasoning, smoked paprika, thyme, oregano, and cayenne. Stir to coat vegetables with spices.
Pour in chicken broth and bring to a simmer. Add shredded chicken and stir to combine.
Reduce heat to low and stir in heavy cream. Simmer gently for 10 minutes until slightly thickened. Do not boil.
Taste and season with salt and black pepper as needed.
Ladle into bowls and garnish with fresh parsley before serving.
Notes
Adjust spice level by adding more or less cayenne pepper.
For extra flavor add andouille sausage or shrimp.
Do not let soup boil after adding cream to prevent curdling.
Rotisserie chicken works perfectly for this recipe.
Serve with bread or rice for a heartier meal.
