A rich, creamy, and cheesy slow cooker tortellini Alfredo made with garlic, spinach, and Parmesan the perfect dump-and-go comfort food dinner.
Ingredients
20 oz refrigerated cheese tortellini
2 1/2 cups heavy cream
4 tbsp unsalted butter
4 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
1/2 tsp crushed red pepper flakes (optional)
1 1/4 cups grated Parmesan cheese
2 cups fresh spinach
1/3 cup chopped sun-dried tomatoes (optional)
Fresh parsley, for garnish
Instructions
In a slow cooker, add heavy cream, butter, garlic, salt, pepper, Italian seasoning, and red pepper flakes.
Stir in Parmesan cheese until combined.
Add tortellini and sun-dried tomatoes, if using, and gently mix to coat.
Cover and cook on LOW for 2 to 3 hours until tortellini is tender.
Stir in fresh spinach about 10 minutes before serving. Let it wilt.
Garnish with fresh parsley and extra Parmesan. Serve warm.
Notes
For best results, use refrigerated tortellini.
Avoid cooking on HIGH to prevent sauce from separating.
Add spinach at the end to maintain its color and texture.
