Description
A rich and comforting Creamy Italian Sausage Gnocchi Soup made with pillowy gnocchi, savory sausage, vegetables, and a velvety tomato-cream broth. Perfect for cozy nights.
Ingredients
1 lb Italian sausage (mild or spicy)
1 small onion, diced
3 cloves garlic, minced
1 medium carrot, diced
1 stalk celery, diced
1 can (14 oz) crushed tomatoes
4 cups chicken broth
1 cup heavy cream or half-and-half
1 lb potato gnocchi
1/2 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
2 cups fresh spinach or kale (optional)
1/2 cup grated Parmesan cheese
Fresh parsley for garnish
Instructions
1. Cook sausage in a large pot until browned. Drain excess fat if needed.
2. Add onion, garlic, carrot, and celery. Sauté until softened.
3. Stir in crushed tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Simmer 10 minutes.
4. Add gnocchi and cook until they float, about 3–4 minutes.
5. Stir in cream, spinach, and Parmesan. Cook another 2–3 minutes.
6. Season with salt and pepper. Garnish with parsley and extra Parmesan before serving.
Notes
For a lighter version, use turkey sausage and half-and-half.
To freeze, omit gnocchi and add fresh when reheating.
Add more red pepper flakes if you prefer a spicier soup.
