Description
A one-skillet dish with juicy pan-seared chicken served over creamy orzo pasta with mushrooms, garlic, parmesan, and herbs. Perfect for an easy yet impressive dinner.
Ingredients
For the chicken:
2 boneless skinless chicken breasts
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
1 tbsp olive oil
1 tbsp butter
For the mushroom orzo:
1 tbsp olive oil
2 tbsp butter
8 oz cremini mushrooms, sliced
3 cloves garlic, minced
1 cup orzo pasta
2 cups chicken broth
1/2 cup half-and-half or heavy cream
1/2 cup freshly grated parmesan
Salt and pepper to taste
Chopped parsley and extra parmesan, for garnish
Instructions
Season chicken with paprika, garlic powder, onion powder, salt, and pepper.
In a large skillet, heat olive oil and butter over medium-high heat. Sear chicken 4–5 minutes per side until cooked through. Remove and let rest.
Add more oil and butter to the pan. Sauté mushrooms until golden, about 6–8 minutes.
Add garlic and cook 1 minute.
Stir in orzo and toast 1 minute.
Add chicken broth. Simmer on medium-low, stirring occasionally, until orzo is tender and liquid absorbed, about 10–12 minutes.
Stir in half-and-half and parmesan. Season to taste.
Slice chicken and return to pan. Garnish with parsley and extra parmesan.
Serve immediately.
Notes
Pound chicken for even cooking.
Use freshly grated parmesan for smooth melting.
Stir orzo frequently to prevent sticking.
Add spinach in last few minutes for extra greens.
Reheat with splash of broth to revive creaminess.
