Description
A creamy, garlicky orzo pasta dish cooked in one pan and topped with seared shrimp. This weeknight-friendly recipe is rich, comforting, and full of bold flavor.
Ingredients
For the shrimp:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
For the orzo:
1 tablespoon butter
1 tablespoon olive oil
1 small yellow onion, finely diced
3 cloves garlic, minced
1 cup orzo pasta
2 ½ cups low-sodium chicken broth
1/2 cup grated Parmesan cheese
1/4 cup milk or half-and-half
Salt and pepper to taste
Fresh parsley or chives for garnish
Instructions
Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper.
Sear shrimp in a hot skillet for 1–2 minutes per side until opaque. Remove and set aside.
In the same skillet, add butter and oil. Sauté onion until soft, about 3–4 minutes. Add garlic and cook 30 seconds more.
Add dry orzo and toast for 1 minute. Pour in broth and bring to a simmer.
Cover and cook 8–10 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
Reduce heat and stir in Parmesan and milk until creamy. Adjust seasoning to taste.
Return shrimp to the pan. Garnish with parsley and serve hot.
Notes
Use fresh Parmesan for the creamiest texture.
Add a splash of broth when reheating to loosen up the orzo.
Stir in baby spinach for a veggie boost.
