A rich and creamy Italian sausage soup made with parmesan, pasta, and a tomato-cream broth for the ultimate cozy comfort meal.
Ingredients
1 lb Italian sausage
1 medium onion, diced
3 garlic cloves, minced
1 can diced tomatoes (14.5 oz)
4 cups chicken broth
1 cup heavy cream
1 1/2 cups small pasta (ditalini, shells, elbows)
1/2 cup grated parmesan cheese
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
2 tbsp olive oil
Salt and pepper, to taste
Fresh parsley, garnish
Instructions
1. Heat olive oil in large pot. Brown sausage until fully cooked.
2. Add onion and garlic, sauté until soft.
3. Stir in chicken broth, diced tomatoes, and Italian seasoning. Bring to boil.
4. Add pasta, cook until al dente (8–10 minutes).
5. Stir in cream and parmesan until smooth.
6. Season with salt, pepper, and red pepper flakes. Garnish with parsley.
Notes
Use freshly grated parmesan for best flavor.
For a lighter version, use turkey sausage and half-and-half.
Freeze without pasta for best results; add fresh pasta when reheating.
