Ingredients
– 1 lb ground Italian sausage
– 1 small yellow onion, diced
– 2 carrots, chopped
– 2 celery stalks, chopped
– 2 cloves garlic, minced
– 1 tsp Italian seasoning
– ½ tsp crushed red pepper flakes (optional)
– 1 (14.5 oz) can diced tomatoes
– 4 cups chicken broth
– 1 cup heavy cream or half-and-half
– ¾ cup freshly grated parmesan cheese
– Salt and black pepper to taste
– Fresh parsley, for garnish
Instructions
1. Brown sausage in a soup pot over medium heat.
2. Add onion, carrots, and celery. Sauté 5–6 minutes until softened.
3. Stir in garlic, seasoning, and red pepper flakes. Cook 1 minute.
4. Pour in diced tomatoes and broth. Simmer for 10–12 minutes.
5. Stir in cream and parmesan. Simmer gently until melted and thickened.
6. Taste and adjust seasoning. Serve hot with fresh parsley.

– For a lighter version, use half-and-half or evaporated milk.
