Description
Creamy tomato basil tortellini soup with cheese-filled pasta, fresh basil, and Parmesan in a silky tomato broth. A cozy one-pot Italian-inspired dinner.
Ingredients
1 tablespoon olive oil
1 small onion diced
3 cloves garlic minced
1 can crushed tomatoes (28 ounces)
3 cups chicken or vegetable broth
1 teaspoon sugar
1 teaspoon dried oregano
Salt and black pepper to taste
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 package cheese tortellini (9 ounces)
1 cup fresh spinach optional
1/4 cup fresh basil chopped
Instructions
Heat olive oil in pot. Sauté onion until softened. Add garlic and cook 1 minute.
Stir in crushed tomatoes, broth, sugar, oregano, salt, and pepper. Simmer 15 minutes.
Reduce heat and stir in cream and Parmesan until smooth.
Add tortellini and cook until tender, 4–6 minutes.
Stir in spinach and basil until wilted.
Taste and adjust seasoning. Serve with extra Parmesan and basil.
Notes
Do not boil soup after adding cream to prevent curdling.
Fresh Parmesan melts best.
San Marzano tomatoes give best flavor.
Add sausage, chicken, or shrimp for protein.
Freeze without tortellini and add fresh when reheating.
