This cozy creamy turkey orzo soup transforms leftover turkey into a velvety, flavorful bowl of comfort with tender vegetables, orzo pasta, and herbs in a silky broth.
Ingredients
2 tablespoons olive oil or butter
1 small onion, finely diced
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 teaspoon dried thyme
1 teaspoon dried parsley
½ teaspoon paprika
1 cup orzo pasta
6 cups turkey or chicken broth
2 cups cooked shredded turkey
½ cup heavy cream or milk
Salt and pepper to taste
Juice of ½ lemon (optional)
Fresh parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, carrots, and celery; sauté 5–6 minutes until soft.
3. Stir in garlic, thyme, parsley, and paprika; cook 1 minute.
4. Pour in broth, bring to a boil, and add orzo. Simmer 10 minutes.
5. Add shredded turkey and cook until heated through and orzo is tender.
6. Reduce heat, stir in cream, and season with salt, pepper, and lemon juice.
7. Serve warm with fresh parsley and crusty bread.
Notes
Use rotisserie chicken if no turkey leftovers are available. Adjust creaminess by adding more or less broth. For a dairy-free version, use coconut milk or almond cream.
