Description

Creamy Tuscan marry me butter beans simmered with garlic, sun-dried tomatoes, spinach, Parmesan, and herbs in a rich cream sauce. A comforting and flavorful vegetarian main or side dish.


Ingredients

2 tablespoons olive oil or butter

1 small onion diced

4 cloves garlic minced

1/2 cup sun-dried tomatoes chopped

2 teaspoons Italian seasoning

1/2 teaspoon red pepper flakes optional

2 cans butter beans drained and rinsed

1 1/2 cups vegetable or chicken broth

1 cup heavy cream or half and half

1/2 cup grated Parmesan cheese plus more for topping

2 cups fresh spinach

Salt and black pepper to taste

Optional crispy bacon or pancetta crumbles

Fresh parsley or thyme for garnish


Instructions

Heat olive oil or butter in a large skillet over medium heat. Add diced onion and cook until softened about 5 minutes.

Stir in garlic and cook for 1 minute until fragrant.

Add sun-dried tomatoes, Italian seasoning, and red pepper flakes and stir well.

Add butter beans and stir to coat. Pour in broth and bring to a simmer for 5 minutes.

Stir in cream and Parmesan. Simmer gently for 5 to 7 minutes until sauce thickens.

Add spinach and stir until wilted. Season with salt and black pepper.

Serve hot garnished with herbs, Parmesan, and optional bacon or pancetta.

Notes

Do not let the cream boil to prevent curdling.

Use freshly grated Parmesan for best results.

Add spinach at the end to keep it vibrant.

For vegan version use coconut cream and vegan Parmesan.
