A quick and comforting pasta dish with Italian sausage, sun-dried tomatoes, spinach, and a creamy Parmesan sauce. Ready in under 30 minutes!
Ingredients
– 12 oz penne pasta
– 1 pound Italian sausage (mild or spicy)
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– ½ cup sun-dried tomatoes, chopped
– 2 cups fresh spinach
– 1 cup heavy cream
– ¾ cup grated Parmesan cheese
– ½ teaspoon red pepper flakes (optional)
– Salt and black pepper to taste
– 2 tablespoons chopped basil or parsley
Instructions
1. Cook penne in salted water until al dente. Reserve ½ cup pasta water, then drain.
2. In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned.
3. Stir in garlic and sun-dried tomatoes. Cook for 1-2 minutes.
4. Lower heat. Add heavy cream and Parmesan. Stir until melted.
5. Add spinach and cook until wilted.
6. Add pasta to the skillet. Toss to combine. Use reserved pasta water to loosen the sauce if needed.
7. Garnish with basil or parsley. Serve hot.
Notes
– Swap sausage for turkey sausage for a lighter option.
– Use half-and-half instead of heavy cream if preferred.
– Add mushrooms or bell peppers for extra veggies.
