Description
A spooky twist on classic spaghetti and meatballs, this Halloween dinner features eyeball-topped meatballs nestled in marinara-coated spaghetti. Fun, festive, and frightfully delicious!
Ingredients
1 lb ground beef or turkey
1/3 cup breadcrumbs
1 egg
2 cloves garlic, minced
1/4 cup grated Parmesan
1 tablespoon chopped parsley
Salt and pepper to taste
12 oz spaghetti noodles
2 cups marinara sauce
2 tablespoons olive oil
6–8 slices fresh mozzarella or mozzarella pearls
6–8 black olive slices
Shredded cheese (optional)
Extra black olives for garnish
Instructions
In a mixing bowl, combine ground meat, breadcrumbs, egg, garlic, Parmesan, parsley, salt, and pepper. Mix until combined and roll into 1.5-inch balls.
In a skillet, heat olive oil over medium heat. Add meatballs and cook until browned and cooked through, about 12 minutes. Or bake at 400°F for 20 minutes.
Cook spaghetti according to package instructions. Drain and toss with marinara sauce.
Slice mozzarella into rounds and top each meatball with a slice and an olive piece to form an eyeball.
Return meatballs to warm sauce for a minute or two to help melt the cheese and secure the olive.
Serve spaghetti in bowls and place eyeball meatballs on top. Garnish with extra olives or cheese if desired.
Notes
For a plant-based version, use vegan meatballs and dairy-free mozzarella. Prep meatballs and sauce a day ahead and decorate just before serving. Use toothpicks to help secure toppings if transporting.
