Ingredients

1 15-ounce can chickpeas, rinsed and drained

1 medium carrot, grated

1 small zucchini, grated and squeezed dry

2 garlic cloves, minced

2 tablespoons chopped fresh parsley or cilantro

1/4 cup chopped onion or green onion

1/3 cup all-purpose flour (or chickpea flour for gluten-free)

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 to 3 tablespoons olive oil for frying


Instructions

1. In a large bowl, mash the chickpeas with a fork or masher until mostly smooth.

2. Add grated carrot, grated zucchini (squeezed dry), garlic, herbs, and onion. Mix to combine.

3. Add flour, baking powder, salt, and pepper. Stir until a thick batter forms.

4. Scoop about 2 tablespoons of the mixture and shape into patties.

5. Heat olive oil in a skillet over medium heat. Cook patties for 3 to 4 minutes per side until golden brown.

6. Transfer to a paper towel-lined plate. Serve warm with your favorite dip.

Notes

Squeeze zucchini well to avoid soggy fritters.
