- ¼ teaspoon cayenne pepper (optional, for heat)

Instructions
- Thoroughly wash the russet potatoes under cold running water using a vegetable brush to remove dirt. Leave the skin on for flavor and nutrients.
- Cut each potato in half lengthwise, then cut each half into wedges (about 8 wedges per potato) for even cooking.
- Soak the potato wedges in a bowl of cold water for at least 30 minutes to remove excess starch. For best results, soak for a few hours or overnight in the fridge.
- Drain the soaked wedges and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.
- In a small bowl, mix together garlic powder, onion powder, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper (if using).
- In a large mixing bowl, add the dried potato wedges. Drizzle with olive oil and sprinkle the seasoning mix over them. Toss until evenly coated.
- Preheat your oven to 425°F (220°C).
- Line a large baking sheet with parchment paper or a silicone baking mat.
- Spread the seasoned potato wedges in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
- Bake in the preheated oven for 25-30 minutes. Flip the wedges halfway through (around the 15-minute mark) for even cooking.
- After 25-30 minutes, the wedges should be golden brown and crispy. If needed, bake for an additional 5-10 minutes, watching closely to prevent burning.
- Remove from the oven and let cool for a couple of minutes. Garnish with chopped fresh parsley.
- Serve the crispy potato wedges with your favorite dipping sauces like ketchup, ranch dressing, or spicy aioli. Optionally, sprinkle with grated Parmesan cheese.
