Instructions

  1. Thoroughly wash the russet potatoes under cold running water using a vegetable brush to remove dirt. Leave the skin on for flavor and nutrients.
  2. Cut each potato in half lengthwise, then cut each half into wedges (about 8 wedges per potato) for even cooking.
  3. Soak the potato wedges in a bowl of cold water for at least 30 minutes to remove excess starch. For best results, soak for a few hours or overnight in the fridge.
  4. Drain the soaked wedges and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.
  5. In a small bowl, mix together garlic powder, onion powder, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper (if using).
  6. In a large mixing bowl, add the dried potato wedges. Drizzle with olive oil and sprinkle the seasoning mix over them. Toss until evenly coated.
