Crispy roasted cauliflower is a healthy and flavorful side dish featuring seasoned florets roasted until golden brown. Easy to prepare and customizable with various spices, it pairs well with any meal and can be served as a snack or side.

- 1 large head of cauliflower
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 2 tablespoons grated Parmesan cheese (optional, for a cheesy flavor)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Remove the leaves and stem from the cauliflower, then cut it into bite-sized florets. Aim for uniform sizes for even cooking.
- Rinse the florets under cold water and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.
- In a large mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Stir well to create a flavorful oil mixture.
- Add the dried cauliflower florets to the bowl and toss them in the oil mixture until evenly coated.
- Line a baking sheet with parchment paper or a silicone baking mat. Spread the seasoned cauliflower florets in a single layer on the baking sheet, ensuring they are not overcrowded.
- Roast the cauliflower in the preheated oven for about 25-30 minutes. Halfway through, around the 15-minute mark, toss the florets to ensure even browning.
- If using Parmesan cheese, sprinkle it over the cauliflower during the last 5 minutes of roasting.
- Once golden brown and crispy, remove the cauliflower from the oven and let it cool for a couple of minutes.
- Before serving, sprinkle freshly chopped parsley over the top for garnish.

- Serve as a side dish or healthy snack. Pairs well with grilled meats, fish, or salads.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes to regain crispiness.
