Description
Tender carrot rounds lightly smashed and pan seared or roasted until crispy and golden. Seasoned with garlic, paprika, and herbs for a naturally sweet and savory side dish or snack.
Ingredients
4 to 5 large carrots, peeled and sliced into 1/2 inch rounds
1 to 2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh chopped parsley for garnish
Optional:
Grated parmesan
Crushed red pepper flakes
Honey or balsamic glaze
Instructions
Peel and slice carrots into 1/2 inch thick rounds.
Boil in salted water for 8 to 10 minutes until fork tender.
Drain and cool slightly.
Gently smash each carrot slice with a flat bottomed glass or masher.
Drizzle with olive oil and season with garlic powder, paprika, salt, and pepper.
Heat a skillet over medium heat with olive oil.
Pan sear carrots 3 to 4 minutes per side until crispy and golden.
Alternatively, roast at 425°F for 20 to 25 minutes, flipping halfway.
Garnish with chopped parsley and serve warm.
Notes
Boil only until fork tender for best texture.
Do not overcrowd the pan or baking sheet.
Add parmesan before baking for a cheesy crust.
Use different herbs or spices for flavor variety.
Can be made ahead and reheated.
