Description

Crispy Zucchini Fritters are golden on the outside and tender on the inside. This easy, veggie-packed recipe is perfect for a light lunch, snack, or appetizer—and great for using up fresh zucchini.


Ingredients

– 2 medium zucchini, grated

– 1/4 cup finely chopped onion

– 1/4 cup grated Parmesan cheese

– 2 cloves garlic, minced

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1/4 cup all-purpose flour

– 2 large eggs

– 2 tablespoons chopped fresh parsley (optional)

– 2–3 tablespoons oil for frying


Instructions

1. Grate zucchini and squeeze out as much liquid as possible.

 

2. In a bowl, mix zucchini, onion, Parmesan, garlic, salt, pepper, flour, eggs, and parsley.

 

3. Heat oil in a skillet over medium heat.

 

4. Scoop batter into the pan and flatten. Cook for 3–4 minutes per side until golden.

 

5. Transfer to a paper towel-lined plate and serve warm.

Notes

Squeeze zucchini well to avoid soggy fritters.

Use freshly grated Parmesan for best flavor.

Fry in batches to keep the oil hot and fritters crispy.

Serve with sour cream, tzatziki, or spicy mayo.

Store leftovers in the fridge and reheat in a skillet.
