Description
A hearty Crock Pot soup that combines ground beef, rice, beans, corn, tomatoes, and taco seasoning into a Tex-Mex comfort dish that’s perfect for family dinners, meal prep, or game day.
Ingredients
1 lb ground beef or turkey
1 packet taco seasoning (or homemade blend)
1 cup uncooked rice
1 can black beans, drained
1 can kidney beans, drained
1 can corn, drained
1 can diced tomatoes
4 cups broth
1 onion, diced
2 garlic cloves
Salt and pepper
Optional toppings: shredded cheese, sour cream, tortilla chips, avocado, cilantro, lime
Instructions
1. Brown meat with onion and garlic in a skillet.
2. Transfer to Crock Pot with rice, beans, corn, tomatoes, broth, and taco seasoning.
3. Stir well, cover, and cook on low 6–7 hours or high 3–4 hours.
4. Stir before serving and adjust liquid if needed.
5. Ladle into bowls and add toppings.
Notes
Cook rice separately if you want firmer grains.
Add more broth if soup thickens too much.
Customize with jalapeños, bell peppers, or different beans.
