Description

Crockpot Creamy Chicken Nachos are the ultimate cheesy, crowd-pleasing snack. Tender chicken slow-cooked in salsa, cream cheese, and taco seasoning, then spooned over chips and topped with all your favorites!


Ingredients

– 1.5 to 2 lbs boneless, skinless chicken breasts or thighs

– 1 (8 oz) block cream cheese

– 1 cup salsa

– 1 packet taco seasoning

– 1 cup shredded cheddar cheese

– Tortilla chips, for serving

– Optional: diced tomatoes, cilantro, sour cream, jalapeños, green onions


Instructions

1. Add chicken, cream cheese, salsa, and taco seasoning to your crockpot.

2. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours.

3. Once the chicken is tender, shred it with forks and stir everything together.

4. Add cheddar cheese and mix until melted and creamy.

5. Spoon over tortilla chips and add toppings of your choice. Serve hot!

Notes

– Use Rotel in place of salsa for extra heat.

– Add black beans or corn for extra texture and volume.

– Freeze leftovers in portioned containers for future meals.
