Description

A colorful mix of shredded cabbage, carrots, and broccoli tossed in a bold sesame soy dressing and topped with crunchy noodles and sesame seeds. Perfect as a side dish or main salad.


Ingredients

2 cups shredded green cabbage

2 cups shredded red cabbage

1 cup shredded carrots

1 cup finely chopped broccoli florets

4 green onions, sliced

1 cup crispy chow mein noodles or fried wonton strips

1 tablespoon sesame seeds

For the dressing:

1/4 cup rice vinegar

2 tablespoons soy sauce or tamari

1 tablespoon honey or maple syrup

1 tablespoon toasted sesame oil

1 tablespoon neutral oil

1 teaspoon grated ginger

1 clove garlic, minced

Juice of 1 lime

Optional: 1/2 teaspoon sriracha or chili paste


Instructions

Shred the cabbages and carrots, chop broccoli, and slice green onions.

Whisk together all dressing ingredients in a bowl or jar.

In a large bowl, toss cabbage, carrots, broccoli, and green onions with the dressing.

Top with crispy noodles or wontons and sesame seeds right before serving.

Serve immediately or refrigerate and add toppings just before serving.

Notes

Do not add crispy toppings until ready to serve.

Make the dressing ahead and store in the fridge for up to 1 week.

Add chicken, tofu, or shrimp for a heartier version.

For a spicy kick, add more sriracha or chili paste.

Use tamari and gluten free noodles to make this gluten free.
