Easy Broccoli & Chicken Rice Cups are cheesy, savory baked mini casseroles made with rice, chicken, broccoli, and cheddar. Perfect for meal prep, lunches, or a quick comforting dinner.
Ingredients
2 cups cooked rice
1 ½ cups cooked chicken, shredded
1 ½ cups broccoli florets, steamed
1 cup shredded cheddar cheese (plus more for topping)
2 large eggs
¼ cup milk
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
Cooking spray or butter
Instructions
1. Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
2. In a bowl, combine rice, chicken, broccoli, and cheese.
3. Whisk eggs, milk, garlic powder, onion powder, salt, and pepper.
4. Stir egg mixture into rice mixture until combined.
5. Spoon mixture into muffin cups, pressing gently.
6. Sprinkle with extra cheese.
7. Bake 20–25 minutes until golden and set.
8. Cool slightly before removing and serve warm.
Notes
Use leftover rice and rotisserie chicken for quick prep.
Chop broccoli small for even mixing.
Freeze extras for easy reheating.
