Ingredients
1 ½ cups all-purpose flour
1 cup pumpkin puree
¾ cup brown sugar
½ cup vegetable or olive oil
2 large eggs
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon ginger
¼ teaspoon nutmeg
¼ teaspoon salt
¼ cup milk or Greek yogurt
For the glaze:
½ cup powdered sugar
1 tablespoon milk
½ teaspoon vanilla
Instructions
1. Preheat oven to 350°F. Grease or line an 8×8-inch pan.
2. Mix pumpkin puree, sugar, oil, eggs, and milk in a bowl.
3. Combine flour, baking powder, soda, salt, and spices in another bowl.
4. Stir dry ingredients into wet until smooth.
5. Pour into pan and bake 25–30 minutes.
6. Cool completely, then drizzle with glaze.
Notes
Add nuts or chocolate chips for texture.
Substitute almond milk for dairy-free version.
