Ingredients

For the Chicken:

– 4 boneless, skinless chicken breasts

– 2 tablespoons olive oil

– Juice and zest of 2 limes

– 2 cloves garlic, minced

– 1 teaspoon smoked paprika

– 1 teaspoon chili powder

– 1/2 teaspoon ground cumin

– 1/2 teaspoon onion powder

– Salt and pepper to taste

For the Avocado Salsa:

– 1 large avocado, diced

– 1 cup cherry tomatoes, halved

– 1/2 cup canned or frozen corn (thawed if frozen)

– 1/4 cup red onion, finely chopped

– 1/4 cup fresh cilantro, chopped

– Juice of 1 lime

– Salt and pepper to taste


Instructions

1. In a bowl, whisk together olive oil, lime juice, lime zest, garlic, smoked paprika, chili powder, cumin, onion powder, salt, and pepper.

2. Add the chicken breasts to the marinade and coat well. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).

3. In a separate bowl, combine diced avocado, cherry tomatoes, corn, red onion, cilantro, and lime juice. Season with salt and pepper. Toss gently and refrigerate until ready to use.

4. Preheat a grill or grill pan over medium-high heat. Lightly oil the grates.

5. Grill the chicken for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes.

6. Place the chicken on a platter and spoon the avocado salsa generously over the top.

7. Garnish with extra cilantro and lime wedges if desired. Serve immediately.

– Use boneless chicken thighs for an even juicier version.
