- 1 cup fresh raspberries, plus extra for garnish
- 1 cup mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee, cooled to room temperature
- 1/4 cup coffee liqueur (optional)
- 24 ladyfinger cookies (savoiardi)
- Cocoa powder, for dusting
Instructions
- Wash the fresh raspberries gently under cold water and pat them dry with a paper towel. Reserve a few for garnish.
- In a medium bowl, mash half of the raspberries with a fork until mostly pureed but still chunky. Set aside the other half for layering.
- In a separate bowl, combine the mascarpone cheese, granulated sugar, and vanilla extract. Blend until smooth and creamy, about 2-3 minutes.
- In another bowl, whip the heavy cream until stiff peaks form, about 3-5 minutes. Be careful not to over-whip.
- Gently fold the whipped cream into the mascarpone mixture using a spatula, then fold in the mashed raspberries until evenly distributed.
- In a shallow dish, combine the cooled brewed coffee and coffee liqueur (if using). Stir well and set aside.
- Quickly dip each ladyfinger into the coffee mixture, coating lightly to avoid sogginess.
- Arrange the dipped ladyfingers in a single layer at the bottom of a 9×9 inch dish or individual serving glasses.
- Spread half of the raspberry mascarpone mixture over the ladyfingers, smoothing it out.
- Scatter the reserved whole raspberries over the mascarpone layer.
- Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture, smoothing the top layer.
- Cover the dish with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight.
- Dust the top generously with cocoa powder before serving.
- Garnish with reserved fresh raspberries.
