Ingredients

  • 1 cup fresh raspberries, plus extra for garnish
  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled to room temperature
  • 1/4 cup coffee liqueur (optional)
  • 24 ladyfinger cookies (savoiardi)
  • Cocoa powder, for dusting

Instructions

  1. Wash the fresh raspberries gently under cold water and pat them dry with a paper towel. Reserve a few for garnish.
  2. In a medium bowl, mash half of the raspberries with a fork until mostly pureed but still chunky. Set aside the other half for layering.
  3. In a separate bowl, combine the mascarpone cheese, granulated sugar, and vanilla extract. Blend until smooth and creamy, about 2-3 minutes.
  4. In another bowl, whip the heavy cream until stiff peaks form, about 3-5 minutes. Be careful not to over-whip.
  5. Gently fold the whipped cream into the mascarpone mixture using a spatula, then fold in the mashed raspberries until evenly distributed.
  6. In a shallow dish, combine the cooled brewed coffee and coffee liqueur (if using). Stir well and set aside.
  7. Quickly dip each ladyfinger into the coffee mixture, coating lightly to avoid sogginess.
  8. Arrange the dipped ladyfingers in a single layer at the bottom of a 9×9 inch dish or individual serving glasses.
  9. Spread half of the raspberry mascarpone mixture over the ladyfingers, smoothing it out.
  10. Scatter the reserved whole raspberries over the mascarpone layer.
  11. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture, smoothing the top layer.
  12. Cover the dish with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight.
  13. Dust the top generously with cocoa powder before serving.
  14. Garnish with reserved fresh raspberries.
  15. Cut into squares or scoop into individual servings and enjoy!
